By assigning "BIN numbers" to the dishes and creating distinctive wine combinations, called flights, he encourages comparison and exploration of the different reds and whites. The high ceilings and huge ovular bar add character to BIN 36. The servers are easygoing and offer counsel on wine selection; there is something for everyone, whether you are adventurous or more traditional.
